As requested, here is what I ate today :) *I eat different stuff everyday, but this is just what I had yesterday. It may sound complicated to you, but it really isn't once you get into the habit of eating healthy. It becomes second nature. *If you have any questions about anything feel free to email me [email protected] Breakfast:So every morning I start off my day with hot lemon water. All i do is feel a mug with water and heat it up in the microwave for a minute. Then I squeeze half of a lemon it. I sip on that while i get dressed:) Then I had my "glowing skin avocado smoothie" SnackIn between classes I always get hungry, so today I packed two protein balls, an apple, and a bag of Skinny pop. I snacked on those before lunch. *I also drank a cup of coffee because I need some energy for the day haha LunchSo for lunch I like to make a big bowl of layers of different stuff. Today I layered the bottom with kale/ spinach, then I put a layer of quinoa, followed by some pinto beans, some steamed leftover veggies (carrots, brocolli, and califlower), and I topped it off with a piece of salmon. Too season I used Nutritional yeast, garlic powder, black pepper. Too get a little more healthy fats I sprinkled a tbs of chia seeds on top. Lol, I know your probably like Avery wth that's so complicatied, but honestly it doesn't take me more than 15mins to pack my lunch. I do it the night before. *quinoa takes so long to cook, so I buy these frozen packs of quinoa at "Whole Foods" that you put in the microwave for 3 1/2 mins * for the veggies I buy these steamable packs found at central market. They are in the produce section and are called "vegatable medley" *Also, sometimes I will use roasted veggies that I made at the beginning of the week or from dinner the night before SnackI had 3 organic turkey slices with some "Hope" hummus spread on them. What I do is lay the turkey slices out and then spread a layer of hummus on each of them. Then I roll them up, like you would turkey roll-ups. I also had two "Alyssa's Oatmeal cookies", and snacked on some fruits and veggies I had in my fridge. DinnerFor dinner I had some scrambled egg whites... I seasoned with black pepper and garlic. Then with that I made a big salad that I layered with a bunch of stuff (haha if you can't tell I love layering things.) In my salad i had kale at the bottom w japanese sweet potato, roasted brussel sprouts, avocado, carrots, and bell pepper on top :) i put some spices on top to season it and squeezed some lemon juice on it. SNackI had an apple with cinnamon sprinkled on it with two more oatmeal cookies!!

Ok, ready for a long story/ rant? So it all started in September of 2015. I got really sick with all these random symptoms. I would wake up every morning feeling extremely fatigued, despite the night of rest before. I would get massive migraines, stomach cramps, dizziness, and just feel a general sense of malaise. I could barely go out with my friends because I would get so tired and and weak. I played volleyball at the time, and I dreaded going to practice. After practice I would feel like I had just been beaten up with a bat. My bones ached and were so weak. During this time I started having unexplained weight loss and just felt so crappy. I got diagnosed with anemia, some weird virus animals get...lol, gasteroparesis, food intolerances, and some funky autoimmune stuff. There was not much the doctors could do to make me feel better... I just could not regain my energy. - but that is when I found healthy eating. I had read in some article I saw in a magazine about how eating healthy had helped a girl with similar symptoms to me, feel better. So you know I started doing some research and found a whole community that had adapted to a healthy eating style to treat their (what seemed like incurable) symptoms. So one day, after many and many months of feeling crappy, I decided to give it a try, and eat more healthy, wholesome, and nutritious foods. I was diagnosed with lactose and gluten intolerances so I eliminated those from my diet. AND OMG guys my symptoms decreased sooooo much. When I eliminated gluten my migraines and fatigue decreased by a lot. When I eliminated dairy, my gastro symptoms were relieved. I started eating a lot more fruits and veggies, lean sources of meat, and pretty much eliminated processed foods. When I did this, I did not realize all the benefits clean eating had on your body. My skin became clearer and my face brighter. My mood was amplified to pure joy because of all the happy endorphins the nutritious food was giving me. My hair got stronger and my nails thicker. I absolutely loved the way clean eating made me feel. Ever since I started to eat healthier foods, I do not crave any processed foods anymore. I crave foods that will give me energy and not make me feel crummy. You can judge all you want but healthier eating has literally cured me, believe it or not. I am not saying you have to eat like me to be happy and healthy...that it just works for me. Although I 100% recommend adapting to a healthier lifestyle; you will not regret it :) Soo then it comes back to the weight loss. During my time while I was sick, I lost a big chunk of weight, unintentionally. This was because I had gastroparesis, which was caused by the virus I had. The gastroparesis caused my stomach muscles to basically slow down to where it couldn't break down my food and nutrients properly. It caused me to feel malnourished, and full ALL THE TIME. But I am slowly reversing it; it takes a while. So right now I am in the process of regaining some of the weight I had lost during this time:) It is going good so far, and I am feeling stronger and healthier everyday.
